The egg supply chain
An egg’s journey explains why shells are coded, why sizes differ and why washing and refrigeration advice cannot be copied from one country to another.
The central idea
Safe egg supply is a chain of connected controls. Flock health, housing hygiene, collection, sorting, cleaning policy, temperature, traceability and household handling all matter.
A practice that makes sense inside one complete system can be unhelpful inside another. The clearest example is washing: it is controlled commercially in several countries, restricted for retail eggs in others, and not recommended as a consumer safety step.
Eight-stage journey

A hen forms the yolk first, adds albumen and membranes, then deposits the shell and cuticle. The process takes roughly a day, although biology, age and environment create variation.
Eggs are laid in nests or housing-system collection areas, then gathered manually or by conveyor. Frequent collection limits damage and contamination, but equipment and schedules vary by farm.
At a packing or grading facility, batches retain an identity linked to the farm or production unit. Checks can include shell condition, cleanliness, temperature and accompanying records.
A bright light reveals internal quality without breaking the shell. Graders assess features such as the air cell, yolk position, white quality, cracks and blood or meat spots.
Some markets wash and sanitise commercial eggs; others generally prohibit washing retail Class A eggs. Either system depends on controls designed around it, so household advice cannot be transferred casually between countries.
Quality grade and weight class answer different questions. Size labels are based on weight and are not globally equivalent; grading rules decide which eggs may be sold in shell and which are diverted.
Shell codes, plant numbers, farm identity, dates, lot information and carton labels create a traceable record. The exact combination depends on local law and voluntary assurance schemes.
Temperature, humidity, handling and stock rotation protect quality. Washed refrigerated systems rely on maintaining the cold chain; other systems place greater emphasis on stable temperatures before sale.

Outdoor access is only one welfare factor. Stocking density, air quality, disease, injury, behavioural opportunity and mortality also matter.
A clean, intact shell reduces concern but cannot prove the absence of pathogens. Assurance, temperature and preparation still matter.
