Hard-boiled eggs

Method

    Bring water to a gentle boil.

    Lower in the eggs, reduce to a steady simmer and cook for 11–12 minutes.

    Move immediately to iced or very cold water for at least 5 minutes.

    Crack all over and peel under a thin stream of water if needed.

What to look for

Use the cues, not only the clock.

The yolk should be fully set but not chalky.

Rapid cooling limits the grey-green surface ring.

If it goes wrong

Difficult peeling: chill fully; slightly older eggs often peel more easily.

Rubbery white: reduce heat and avoid cooking beyond the required time.
