Method

Heat 5–8 cm of water until small bubbles rise gently.

Crack each egg into a separate cup.

Slide one egg into the calm water and repeat, leaving space between them.

Cook 3–4 minutes, lift with a slotted spoon and blot underneath.
What to look for
Use the cues, not only the clock.
The water should tremble, not roll.
The white is set when it feels softly resilient; the centre remains rounded.
If it goes wrong
Feathery white: use a fresher egg or strain away the loosest white first.
Tough egg: lower the water temperature or shorten the time.
