Heat the fat in a suitable frying pan.

For tender whites, cook over medium-low and cover briefly. For crisp edges, use hotter oil and spoon a little over the white.

What to look for
Use the cues, not only the clock.
Tender style: quiet cooking and opaque white.
Crisp style: active bubbling and browned, lacy edges.
If it goes wrong
Raw white near yolk: cover the pan or spoon over hot fat.
Burnt underside: lower the heat or use a heavier pan.
